March has definitely came in like a lion in the Loeffelman household. Asher’s had his first nasty cold of the season and I’m hoping the rest of us aren’t soon to follow. Germs. Mehhhh. Anyway, I thought I’d share this tasty little preschooler approved soup recipe with you guys. @emilyloeffelmanRECIPE – (this recipe serves 4, double if needing more) 

1 chicken breast (on the larger side)
2 boxes chicken stock
6 carrots – diced
1 small bag of thawed frozen peas (you can substitute 1/2 cup of other green veggies or even add them in as well!)
few pinches of fresh parsley
1 tsp ginger root powder (this gives the soup a little zing – leave out if ya got a picky eater)
1 tsp thyme
1 tsp basil
pinch of kosher salt/pepper
1/2 – 1 c. noodles – Asher likes the bow-tie!


In a larger pot pour chicken stock and place whole breast in to cook. Add carrots and seasonings and simmer until chicken is cooked through. Remove chicken breast from pot and cut into small pieces on a cutting board. Return to pot and add noodles and peas. Simmer until carrots are soft and noodles are al dente. Let cool and serve!


-go light on the seasonings if your child isn’t familiar with them 
-make a large pot of soup, divide into containers + freeze for a later date. I always like to have some frozen as a backup incase someone gets sick!




Asher’s Great Grandma came in for a little visit last week and while she was here we made some fun kid and grandma approved treats for him to snack on. Baking with grandma brings back some fun memories for me and I’m so thankful that Asher got to spend some quality time with her on her visit here!

Asher loves cheesecake, me as well, so I wanted to make something that was cheesecake related and fun, but kid sized as well. I try to avoid giving him a lot of sweets, but every once in awhile I treat him to something fun and make sure it’s delicious.IMG_9505Aside from these little treats being tasty and fun, they are also nut-free! Instead of making these little cheesecakes with a crust that would contain nuts or a product that could possibly be cross-contaminated. I used my favorite nut-free products from Skeeter Nut Free, to create a yummy crust that’s easy, soft and of course, delicious! Here’s how to make these fun little cheesecakes!IMG_9443What you will need – (Recipe makes exactly 12 mini cheesecakes, double recipe if more are needed) 

Skeeter Nut Free All Natural Cinnamon Grahams 10oz box 
Organic Cream Cheese 8oz
1/3 c. Organic Sugar
1 Organic Egg
1 tsp. Pure Vanilla Extract
Fresh Chopped Strawberries (for topping)
12 Baking Cups

1.) Start off by preheating your oven to 325 degrees. Using a stand mixer or large bowl cream your sugar and cream cheese on a medium speed, I like to use 6 on my mixer, until it is nicely blended.  Note: This is a great time to let the kids get in on the action! 
IMG_9449IMG_94522.) Next, add egg and vanilla and beat until batter is blended and smooth. IMG_94563.) Line your muffin pan with baking cups and carefully place Skeeter Nut Free All Natural Cinnamon Grahams in the bottoms of the cups to line them, almost like you are making a crust with the grahams!  IMG_9465IMG_94894.) Not required, but feel free to snack on a few of these delicious Skeeter Nut Free Grahams while your are baking! IMG_94715.) After the bottom of your cups are lined with Skeeter Nut Free All Natural Cinnamon Grahams, carefully scoop the batter into each of the cups filling them about 3/4 of the way full. IMG_9478IMG_9484IMG_9482IMG_9483IMG_94856.) Give the pan a light shake to loosen any bumps and even out your batter. IMG_94907.) Bake about 16-20 minutes and carefully keep an eye on the cakes. After they are finished, let them cool. You will notice them deflating after they cool, which is perfectly fine! Refrigerate for 4 hours or overnight.

8.) Topping – using your chopped strawberries, lightly top mini cheesecakes with strawberries and feel free to crumble a few of the Skeeter Nut Free Grahams and sprinkle on top! They are the perfect finishing touch! And I love that he loves them! We are always trying new things so I will keep you guys up to date on our favorites! As for now here is what Asher is currently snacking on….

Organic Banana Chips – I picked up some organic banana chips from our grocery stores bulk foods isle a few weeks ago just to see if Asher would like them and he’s been obsessed ever since! They are delicious and nutritious!

Cereal – cereal isn’t only a great go to for the mornings but also a great take along snack! A few of our favorites are these fruity Cheerios, Cascadian Farms, and Vans!

Blackberries – Frozen or fresh, Asher has been snacking on yummy blackberries here lately. I used to always just stick them in his smoothies, but when I ran out of blueberries for him to snack on the other night I substituted blackberries instead and he loved them!

Annie’s White Cheddar Bunnies – We are diehard Annie’s fans over here and love all of their amazing snack + meal options. I always have their cheddar bunnies and bunny grams on hand. Annie’s products are delicious and made from the heart! You can pick up Annie’s products at Target and other grocery stores.

Cucumbers – Cucumbers are a great little snack and even better if your little one is teething! They have been a lifesaver as Asher has cut his 2 year molars.

Cuties – Cuties aren’t just super yummy to snack on but they are also certified GMO free which is a big thing to factor in when purchasing snacks for your family. There are SO many GMO’s in the stores these days and GMO’s cause SO SO many issues… especially with kids. I try to buy organic, GMO free, and in season products as much as I possibly can!

Today I wanted to share with you guys one of my favorite go to recipes. Those of you who follow me on Instagram know that I am always whipping up a delicious batch of pancakes for breakfast. We could seriously eat them every morning! Recently I started making our pancakes with Daisy Brand Cottage Cheese and we haven’t eaten them any other way since! They are so moist, super delicious, and did you know Daisy Brand Cottage Cheese is gluten free?! That’s right! Since my husband Jacob has a gluten sensitivity this is the ONLY cottage cheese I buy. It’s 100% pure, no additives, and gluten free! I also love that it is a great source of protein. Some mornings I don’t feel like cooking a meat and incorporating Daisy Brand Cottage Cheese is a great protein alternative. We are all about clean eating and staying healthy and I’m so pleased that I’ve found an amazing product that works for our clean eating lifestyle! 
INGREDIENTS: (makes 4 pancakes)
1/4c. Gluten Free Pancake Mix
1 Organic Egg
1/4c. Fresh Organic Blueberries 
First you will want to combine your ingredients in a medium sized mixing bowl.

Next you will want to mix the ingredients well with a wire whisk or fork.

In a coconut oil greased skillet over medium heat pour pancakes and add blueberries. 

Cook until pancakes are nice and golden in color. Serve & enjoy!
